Falling in Bliss with these Foods

My friends and food continue to endlessly inspire and amaze me every year. The last 2-3 years, through dining experiences in school and with my loved ones, I’ve realized that there are a lot of food and beverages out there that I find complete happiness, comfort and most of all love in.

Last year was mussels, cold brew, lobster, and so much more. This year is a little different and I’d like to show you the foods I’ve been falling into bliss with:

I used to think that sashimi or even the idea of smoked salmon was disgusting. However, my boyfriend is the biggest salmon lover that I know and he has told me good salmon should never taste fishy. Last year, I started eating salmon rolls, spicy crunch salmon roll, and I loved it! Now onto smoked salmon, a friend brought smoked salmon with cream cheese rolled inside and I thought it was insanely good. Now every once in a while I do cook with smoked salmon or make smoked salmon crackers.dishes and drinks with mango2.Ā Mango

I used to be allergic to mango, but somehow it disappeared and once in a while I still get an itchy throat if I eat too much. I started eating a lot of mango last year and now I love mango sago, mango smoothie, in sushi, in salads, and so much more.

3. Avocado

Based on a study that was read to my restaurant management class over the summer, avocado toast is one of the hottest food trends. I never really liked avocado before until I discovered guacamole. I enjoy eating avocado very much especially avocado toast and nothing make it taste better than a fried egg.

French onion soup brings back memories of my dining room and culinary class that I took here at City Tech. I remember from the way it’s served, the type of bowl, and down to the type of broth and much more. This year I learned that my boyfriend loves French Onion soup and 90% of the time he will order it if we’re eating at an American or French restaurant, even at diners. I wanted to know exactly why he was so fascinated with this soup and Ā so we shared a bowl recently and it was great. First off, it smells insanely good and melted cheese make a lot of things taste better. When this soup is done right, it can really make you happy and full!

5.Ā Vita Coco

My sister and mom have been drinking Vita Coco for more than a year now and they said it’s very refreshing and keeps you hydrated. This summer, I gave it a shot and I love it. It’s better than a lot of drinks I’ve had so far. I’ve tried pineapple and passion fruit and it’s excellent.

Last, but not least there’s another special food that I love and have ate, but never took it upon myself to cook or make food with it at home. Last summer and this year, I was exposed a lot to prosciutto and I loved it. I recently had one from Piccoli Trattoria. They had an amazing prosciutto with fig jam and on toasted bread. It was a good balance of salty and sweet.

So these are the six food items that I have fell in love with this year Ā and I am excited to see what I may try with the rest of this year and every year to come. I am excited to see what is next that will fascinate me.

Why I Love Diners

My boyfriend once said to me, “When it’s our turn to get marry, I’ll make sure to tell everyone that I’ve never been to so many diners until I’ve met you.” Honestly. I don’t know when my affinity for diners began, but I’ve been going to diners for the last six years and I have no complaints except for when the food and the service lacks good quality.

The sad fact about diners is that a lot are closing down or have closed down, leaving us hungry customers with limited choices in diners. For now, I’d like to share with you my three favorite diners and why I love diners in general:

Coachhouse diner dishes

My boyfriend and I frequent Coach House Diner when we’re in New Jersey and want to go to a restaurant/diner that is affordable and delicious. I like this diner a lot because it feels like a diner, but than it doesn’t. They do have booths, counter tops, diner-like food and beverages, and they are opened 24/7. However, they also have a restaurant vibe to it because they have an exclusive section that’s a bar, it’s fairly spacious and comfortable, and they have daily specials for dinner and special soups that you wouldn’t find at other diners. They also have a salad bar for you to customize your own salad and always have a delightful,freshly baked bread basket for you. I highly recommend this diner if you’re in New Jersey!

Another diner I really and truly love is Brownstone Pancake Factory. They have two locations – Jersey City and Edgewater which I have been to both, but my ultimate choice and favorite one is Jersey City. I have been to the one in Jersey City both on weekdays and on Saturdays and there’s always a little wait, but hell it’s worth it. Brownstone Pancake Factory offers diner like dishes, but their main focus is brunch and pancakes. This is my go-to diner for brunch in New Jersey.

I found out about this place through Food Network, Yelp, and because a friend told me a restaurant, but I thought it was Brownstone Pancake Factory, but I was mistaken. One factor that separates Brownstone Pancake Factory form any other brunch place we’ve been to is they have these insane, monster-like pancake wraps which is what Guy Fieri tried on his show: Diners, Drive-Ins, and Dives.

Another one of my favorite diners is a local spot in my neighborhood: Vegas Diner. It’s also dear to my heart because it’s the place that my boyfriend and I had our first official date on Christmas Eve of 2010 (yes I remember it so clearly). This diner definitely has history in Bensonhurst and definitely a very family friendly diner. The food here is delicious and I always leave this diner as I do with most diners completely full. Unfortunately, I’ve heard recently that this diner may have been bought out or will be facing a conversion, so looks like my boyfriend and I may have to make a visit soon.

More reasons why I like diners are that: there’s always something for everyone at a diner and opened either late or 24/7 and it just feels very homey, comfortable, and I never leave diners starving again. I have been to my share of bad diners and bad service/food at diners, but that’s a whole different story.

Pros and Cons of Blogging

A blog is information or conversation that is published online. Having been blogging since about 2010/2011, doing my beauty/hair blogs, as well as reading the blogs of others, I noticed some great things and some wow factors. Therefore, I have comprised my first list about the pros and cons of Blogging.

PROS

  1. There is a market for everyone: What ever you think about, hope to be, or have an interest in, can be the topic of your blog. There will be several other people who will be interested in that information as well. If you google cleaning with lemons, thousands (made up figure) of blogs and individuals asking the questions will pop up.
  2. Easy to start: All you have to do is go on Wix, Blogger, WordPress, Facebook, or have your own site and start writting. There are several free and paid avenues to start from. I started with Blogger and WordPress before publishing my own site and adding a blog to it. All were free.
  3. It is a great marketing tool: If you have a product or service you wish to spread to the masses, just blog about it. You can post video, reviews, comments and more. Share it on social media, advertise on craigslist, and/or post links and ads to your blog or the blogs of others.
  4. You can make an additional income: Speaking of advertising for other blogs, you can use the your blog to get paid and advertise for other blogs, services and products. You can get paid or get free products to review products and share it on your blog. For example, I was sent a hair product to review for my beauty blog.

CONS

  1. People have freedom: With freedom comes responsibility, or one would hope. Some people post Lies, degrading things and disgusting things. Either way, because there are no limitations, they have that freedom.
  2. It can be hardĀ knowing who or what is credible: With the freedom to post, people try their best to decieve others. They may have fake facts, fake logos to make you think its a known site, and other ways of deception. Make sure before you take ideas you do your research.
  3. Without a following you can be your only subscriber: For sometime it may seem like you are the only one reading your post. You maybe, just share it and market your blog. You can become an affiliate of another company also and get paid, which I spoke about in previous post. You will eventually get some people to comment or follow you.
  4. Self-ran: You have to put in the work on your own, unless, of course, its a team of bloggers like THE BUZZ.

The Importance of Audience Engagement

When I think of the array of topics that I have talked about in my blog posts, I am faced with the question of “why was it relevant?”. I have many reasons for each of the concepts of my posts as well as why I have chosen to write about such topics that I feel would appeal to each of my readers. Obviously, I hope that each of my posts are relatable as each of my posts are about food themed topics, I encourage all to read my posts whether if you enjoy baking, are learning how to bake, or simply interested in baking topics. But there is more to blogging than just wanting to be relatable because being relatable is more than just an incorporation of this concept but almost a science of putting yourself in the minds of your readers. By becoming the reader, you must be a number of readers, in my case, it would mostly be two very different types of readers ……. the bakers and the non-bakers as well as everyone in between that measurement of readers. But the truth is no matter how relatable your blog is it will not appeal to everyone because each person simply has their own basis of what they are willing to read and what is not as important for them to gain interest from.

First, you must create a target audience, this will enable you to fully understand what you are trying to share information about and who you are trying to reach with your posts so that you will be able to evoke that in your writing. These posts may even motivate your audience of readers to want to learn more about that specific topic or it may help them with personal events in their life. And, there is always room for your target audience to expand depending on the topic, it can be of interest for many while others may not be but that is purely up for the writer to decide what their readers want to hear based on past posts and the number of views/comments for the most popular ones.

Second, the topics that are discussed should entail newsworthy subjects that will either impact the reader to want to continue reading to gain more knowledge on this topic and also have the possibility of liking your way of writing, in terms of the way you evoke ideas which creates opportunities for them to be interested in your other posts.

Third, headlines can purely influence a reader’s decision to read the entire post or to just keep scrolling through. Ultimately, the choice of words that are selected to be used in the headline of a post may be a determining factor for readers to decide whether or not they will continue to read the post. The headline should set the tone for the entire post but should add some excitement that will persuade and encourage readers to want to read the post.

Fourth, topic tagging is an important part of blogging because it helps the readers know what the topic of the post is about because they choose to read it in its entirety. This only gives the key words that are used in the post or to describe the topic of the post. It not only helps the readers to have a common knowledge of the subject being described but helps the writer to stay on topic to reach their target audience.

And finally, ask questions in your post to encourage comments. With the addition of comments, it allows for the conversation to further continue by understanding the readers’ opinions. Comments are hard to obtain, some may not read your post all the way to the end which eliminates the option of commenting while others may not feel obligated to comment on your post. But comments are helpful, it lets writers know that readers are listening and opens doors that show that the post is not one-sided because even the readers get a chance to share their thoughts.

Food has always been a centrical part of my life, my mother was a single parent and I have only seen my father a few times over the years, most of which were negative experiences. But there were a couple of good times in which he shared his recipe of Puerto-Rican styled rice pudding for me and my sisters to devour. It is the only good memory that I have of my relationship with my father. Anyway, I lost track of this as time passed and the hurt that I endured in the small extent of my life with him. I began to hate the simple idea of any food that reminded me of him. It would simply reignite the flames of pain that he caused; the lies, the broken promises, and the absence. But I realized that all the hurt that I had dealt with had helped me to become stronger than I had ever been because I overcame the hurt. But by not enjoying the things that I had thoroughly enjoyed because of who it reminded me of only stopped me from living while he continued to enjoy his life.

I decided to challenge myself this summer in terms of making all different kinds of desserts and truly enjoying the sanctity of that. Whether named arroz con leche, kheer, and riz au lait; rice pudding can be prepared in so many different ways but all are delicious in their own way. I have decided to share this recipe below with all my readers so everyone can experience this beautifully delicious dish.

Rice Pudding

Ingredients:

3/4 cup Arborio rice, rinsed

6 cups whole milk

1/2 vanilla bean, split and scraped

1/2 cup sugar

Pinch of salt

1/4 cup heavy cream

Directions:

In a medium saucepan, combine rice, milk, vanilla bean and seeds, sugar, and salt. Bring to a boil over medium-high heat; reduce heat and simmer, stirring frequently, until rice is tender and liquid has absorbed, about 40 to 45 minutes.

Remove vanilla bean; stir in heavy cream. Rice pudding may be served at room temperature or chilled.

My Love For Baking

Now that schoolā€™s out, I am able to offer myself to pursue the other events in my life that I was once too busy to enjoy. Yesterday was the fourth of July and it is usually celebrated with the union of family by way of food, barbecues, and fireworks to commemorate those who have served in the armed forces. As I watched the colorful fire burst into the air, I was amazed by the beauty of it, something as simple as a firework made me smile and I realized that the beginning of this week was the most I have smiled in a long time. My life has been an utter worldwind this year and I am just happy to know that things are finally looking better. With more time on my hands, I thought back on my blogging experience with ā€œThe Buzzā€ for the past two years. I have endured so much though I have chosen to only post about food themed topics because it is the only constant that has brought joy to my life. It is the only thing in my life that truly calms me and for anyone who is currently going through a rough time, I hope that you find the peace that you are seeking.

The truth is that life comes with obstacles and can be difficult to bear at times. But I have learned that in order to make it through the tough moments is to lean on other people that will be there to listen or offer any type of support. So many people have truly showed their support for me in ways I have never imagined and I cannot thoroughly express how much that truly means to me or how much it encouraged me to know that things will be better eventually. To those who are currently facing struggles in life, I can confidently say that the dust will settle and that life although it is a tumultuous rollercoaster will be fulfilling to an exponential amount. Yet, life has constantly proven to throw curveballs and surprise me in both respectively positive and negative ways. Many question why I blog specifically about food rather than the struggles that occur in my life on the daily basis. And the truth is that I do not wish to dwell on the things in my life that I unfortunately have no power to change, instead I share how I cope with my struggles.

Baking is my therapy, it allows me to be able to escape to a world of paradise where the most stressful thing is to crack the eggs, measure the sugar correctly, or sift the flour. Nothing compares to my passion for baking because unlike anything else in life, the result of baked goods can be controlled by simply following the recipe. It brings me joy to make others happy by way of the desserts I have carefully taken time to create.

So I hope to encourage all my readers to enjoy life and when life gets tough, know that there will be better times. Someone very close to me shared this quote with me and now I will share it with all of you.

Why I Love Thai Food

If you ask my friends or boyfriend, “what’s Jessica’s favorite cuisine/type of food?” 9 out of 10 them would say Ramen or Thai food. I’ve frequently visited Thai restaurant the last few years to the point some friends got a little sick of it because to them Thai food wasn’t too impressive to them ,but to me I absolutely love it.

I think I have been to fourteen Thai restaurants between Brooklyn, Manhattan, and Queens. That’s quite a lot, but I am sure there are others that have been to more Thai restaurants. So here’s a few reasons why I love Thai food:

I absolutely loveĀ Pad Thai! It’s definitely one of my favorite noodle dishes and I love that it has a slight tang-like flavor, but also with a little sweetness. There was a time in my life where I would try the different Pad Thai around different Thai restaurants and some were a hit or miss. I also like that you can have it with chicken, beef, seafood, vegetable, pork, and etc.

I also loveĀ Thai Ice TeaĀ as most people do when they have Thai food. It’s rich, not too sweet, and just really refreshing and delightful.

One of the appetizers I really enjoy at a Thai restaurant is theĀ Chicken Curry PuffĀ which is filled with chicken, carrot, potato, onion, and Massaman curry. It’s often served with a sweet cucumber vinegar. The appetizer is very moist with delicious curry flavors, but not at spicy at all.

I also can’t forget Thai Ice Tea ice cream. Yep there is such a thing and in fact, I feel more and more places are carrying this flavor! The Thai Ice Tea ice cream I’ve had is very rich, creamy, and you can really taste the tea-ness in the ice cream.

Another reason I love Thai food/going to Thai restaurants is the decor and ambiance. Most Thai restaurants have a intimate, dim light setting and pretty calm and relaxing.Ā There are some reasons why I love Thai food.

Why I Started Blogging for The Buzz

I started blogging for The Buzz in January 2016 (Spring 2016 semester) as a Student Blogger. I started blogging for The Buzz for a couple of reasons:

  • I didn’t have the time or day to join a club or events that were happening around City Tech, but when I received an e-mail in my inbox that there were blogging opportunities with The Buzz I quickly sent in my resume. Although I was busy working and going to school, I knew I had time to squeeze out posts about my experience with food, blogging, and restaurants in the evening.
  • I also wanted to build my portfolio and show future employers that I blog and write beyond what’s expected from me as a student in school. I write on three blogs (two of which I launched on my own) and I am an active Yelper.
  • I know City Tech has a news publication team – New Tech Times which I have written for before about food too, but technology has evolved and so have I so I wanted to put my experience, thoughts, and ideas with The Buzz.
  • I know that City Tech cafeteria food isn’t the best so I wanted to show and open up City Tech students and faculty of the neighboring restaurants and food spots that they can try out.
  • If you don’t already know, food is one of my biggest passion and love!
  • I also love to write and blog. I’ve been blogging for over 10 years and it makes me good to share my individuality, my feelings, and experiences.
  • I was reading blog posts from previous bloggers for The Buzz and everyone has their own blogger voice, but I wanted to bring something fresh, fun, and personal.

Everyone joins a team, club, event, and etc. for different reasons. You’ve just read why I joined The Buzz and if you’re a student blogger or photography blogger for The Buzz, why did you join The Buzz? or If you’re a blogger, why do you blog?

Can Theft be Justified?

Unfortunately, due to the recession and the constant financial woes that Americans as well as other nations face around the globe, hunger and poverty has risen as food has slowly become less affordable as a result of agricultural difficulties. While many stores are selling processed foods at lower prices, it can still be difficult for anyone to have enough money for food and this has led to an increasing number of homeless Americans. Increased homelessness has created a greater need for food banks in order to offer more options for the underprivileged to still be able to eat nourishing meals. With the alarming rate of food scarcity that many are faced with, it leaves little choice but for them to steal food in order to be able to avoid complete starvation for the functionality of their lives.

The Italian government has ruled that theft conviction in terms of food theft will not be considered a crime as long as the person who stole the food is in dire need of it. The food stolen must only be a small amount that is needed for immediate essential nutrients, acting only in a state of necessity. The court of cassation believes that as Italy tries to remain a civilized country, it will do everything possible to avoid the starvation that the underprivileged endure on the daily basis. One man was recently sentenced to six months in confinement and fined 100 euros for stealing the amount of food costing less than five euros. This is seemingly an injustice in terms of the punishment that he received for the small petty crime that was committed.

This begs the moral question, ā€œis stealing always wrong?ā€, usually theft is matched with some sort of punishment but what if the reasoning behind the actual theft was one of pure economic hardship and desperation? I find this governmental change to be extremely interesting and I wonder if it could possibly work in America to better help homeless people by allowing them access to food without the worry of jail or not having financial stability to afford such food items. Yet, with the gluttony that has been publicly used to describe Americans, it can be worrisome that Americans may choose to take advantage of this opportunity in which they will begin stealing more than what they need at that time in order to selfishly help themselves. It may also lead to a higher crime rate of stealing and may negatively affect businesses as their profit lowers. Although, this is a nice gesture, it can easily be abused. In order for it to work, there should probably be a price limit of how much can be taken at once or some proof of hardship.

My Favorite Five Dishes That My Mom Makes

Mother’s Day is just around the corner and today I am not writing about a restaurant I’ve tried , but instead I would like to share with you seven dishes that my mom makes that I absolutely love. My mom is one of the best chefs I know because she really does put a lot of heart and soul in cooking and the food. When we have a feast to honor our ancestors, mom is always the one that cooks and every time the feast is always delicious. Ā Although I know how to cook already, I want to be as great as my mom is.

This is my mom’sĀ Pan-Fried Salmon with Tomatoes that I absolutely adore. This is really my favorite salmon dish and full of flavor and deliciousness. I thought it was a complicated recipe, but apparently it’s very simple and I have tried making it before and it’s easy!

Chinese food

This isĀ Zongzi or Joong and it’s a traditional Chinese food made with glutinous rice stuffed with different fillings and wrapped with bamboo leaves. My family and I typically make and eat these during the fifth month of the lunar calendar. My mom always makes these and adds a lot of fillings and makes her own salted eggs. Her joong is always number one to me.

These are Fa Gao and it is a Chinese cupcake-like pastry, mostly consumed on Chinese New Year, but my mom does make these when she has the time. I truly enjoy eating the Fa Gao my mom makes versus the ones from the Chinese bakeries because it’s usually colored with food dye. My mom doesn’t use food dye at all and she uses brown sugar instead of white sugar. They are extremely fluffy and moist!

This is my mom’s famousĀ Vermicelli with dried shrimp and she makes this just about every Chinese holiday or for our birthdays or whenever we request for it. It’s extremely tasty and it never gets tiring to eat. This dish also represents longevity.

stewAnother food that my mom makes during December for a Chinese holiday is called tong yuan which can be eaten savory or sweet. We often eat the savory version for breakfast or dinner. For the savory version, my mom usually adds mushroom, cabbage, shrimp, chunks of dried scallops, scallions, and chicken or pork. It’s really an enjoyable food and soup to have especially during winter.
