Week 2:  Monday, February 5, Textbook Chapter Chapter 1, pgs 3-23

Week 3: Tuesday, February 20, Textbook Chapter Chapter 1, pgs 23-46

  • Using examples from Disney’s Approach to Guest Service, describe a time when you experienced “Disney Like” service.
  • Think about the information presented in the chapter and then conduct a Self Assessment of yourself. What personal traits will you work on to meet the expectations of the hospitality industry?
  • Identify three organizations you would like to work for. Make a list of the companies. What are the attributes of the company that make you anticipate the company as an organization you would like to work for.

Week 5:  Monday, March 5, Textbook Chapter #3

  • Write two questions you wish to ask a member of the executive committee of a hotel during out site visit (Rooms Division, Food and Beverage, Engineering…)

Week 6: Monday, March 12, Textbook Chapter Chapter 4 and 5

  • What inventory controls are important in a F&B operation? Why? Use terms from the text to explain all  your answers.
  • Read, think and write about any one of the following questions. Create a post on the OpenLab under the category “The 1 Hotel Site Visit” for this reflection only:

    • What was the most significant information you learned while at The 1 Hotel?
    • What action will you take to network with the people you met?
    • What did you like/dislike about the site visit to The 1 Hotel?
    • What one aspect of the site visit made you want to or not want to work in the lodging industry?
    • Did you feel prepared for what you experienced during the site visit?
    • In what way do you believe you need to prepare for a career in the luxury hotel market?
    • How did you feel about going to The 1 Hotel?  

Week 7:  Monday, March 19 Chapter 6 and 7

In each chapter identify 12 words or terms that were new to you, define each word in detail.

Identify a job in the field of food service or restaurant management as it is explained in the textbook. Referencing the information in the chapter, in what way do you believe you would find success in this position?

Week 8: Monday, March, 26, Textbook Chapter 10

  • Identify 12 words or terms that were new to you, define each word in detail.
  • Identify two national parks from the National Park System with distinctly different characteristics. Then write a description of both parks including why they are important parks in the National Park System. Explain why you would want to visit each park.

Week 9:  Monday, April 9, Textbook Chapter 9

List the common types/categories of tourism.

What economic impacts does tourism make?

List and explain the goal of three organizations in the tourism industry.

Review chapter 9, focus on the types of tourism.

Prepare for guest lecturer by reviewing the Chamber of Commerce Website. 

Answer the following questions:

  1. What did you learn by reading the website?
  2. Choose a neighborhood, what can a tourist learn about that neighborhood based on the website?
  3. Thinking as a tourism professional, which area of the website provides the greatest information to a potential tourist?

We will meet a tourism professional. Write two questions you wish to ask Ms. Mariela Estrella, Director of Tourism, Brooklyn Chamber of Commerce.

For chapter 12 and chapter 13, identify 12 words or terms that were new to you, define each word in detail.

Identify a job in the field of Meeting and Conventions Management as it is explained in the textbook. Referencing the information in the chapter, in what way do you believe you would find success in this position?

Week 14, Tuesday, May 14

  • First, think of a leader you admire and know personally, make a list of their qualities.
  • Next, read the article Seven Transformations of Leadership. What type of a leader is the person you admire?
  • What have you learned about your own leadership qualities based on those of the person you admire? Explain, your answer using terms you have learned this semester.
  • Visit Hcareers.com, bring in a job description for a job you would like to attain in the next six months. Also, bring in a job description for a job you would like to attain in the next 12 years. Identify the skills you will need to develop over time to secure this position.

Week 15, Tuesday, May 21

Prepare for Accounting Taboo by reviewing the definitions of the terms provided.
