Are you, or someone you know, insecure? Do you, or someone you know, feel most happy when all attention is on you? Do you, or someone you know, seek to discredit others and their relationship to find self-worth? If you answered yes to any of the previous statements then I have unprofessionally diagnosed you with low self-esteem and you need to seek therapy or start to love yourself a bit more.

I am unsure who is to blame for the lack of self-love that I come across on individuals. Is it the parents, whether neglectful or having enabling characters? Is it the individual, their lack of experiences or stubbornness to change? Either way IT DOES NOT MATTER. As a person, one must “find” themselves eventually. With finding oneself one shall LOVE ONESELF. I do not mean latching on a group, drowning in music, or seeking religion just to make yourself feel better or to find an excuse for your F’d up ways.

Unfortunately, I do not have a concrete answer. Heck, life isn’t concrete! But I do wish to bring awareness to the lack of self-love and bitterness that is within people. These same people carry hatred in their hearts and make it spread like wildfire, which inevitably cause things like war, slavery, provocative youth, suicide etc.  I am no genius but I am pretty sure hate and Donald Trump supporters are directly proportional. And for a little laugh, I dare you guys to go to Loser.com .

Seizing Opportunities in Leadership

You might not be in a leadership position now but making the most of leadership opportunities is a must. In fact, whenever you have the chance to show your leadership ability, you should seize the opportunity. With drive and determination, everyone can become better leaders and perfect a valuable skill. Employers are really looking for people who can take initiative to lead without coming to ask them what they should do every step of the way. They want people who can think of what needs to be done and present them with the options. Then all they have to do is make an executive decision. In other words, if you demonstrate to others that you have real leadership potential, you vastly increase your job prospects.

But what can you do now to prepare for your future? Here are some leadership tips to consider from Leadership Freak:

  1. Release yourself for more by delegating easy tasks. Fools cling to familiarity and ease. What’s easy for you is challenging to others. Help others do what you do well. One way to develop yourself is to develop others.
  2. Explore the irritating behaviors of others. Irritations are often mirrors. How are you like the people you don’t like? Loud voices irritate me.
  3. Spend more time reflecting on your performance and less on others. When your performance improves, the people around you improve.
  4. Challenge yourself. You stop growing when you stop taking on new challenges.
  5. Evaluate your performance mercilessly. Nitpick little things. Chances are the little things are bigger than you believe.
  6. Make a difference right now. This whole “change the world thing,” often becomes an excuse to neglect small opportunities.
  7. Record daily insights and observations. Keep a notebook handy and write things down. When you hear something curious or surprising, explore it.
  8. Swim against the current. Doing what everyone else does obscures your potential.
  9. Think better not perfect. How might you be a better listener today, for example?
  10. Pursue relationships with people who are better than you.

Foggy Nights

It’s something I’ve always try to live by. Instead of fussing and feeling ‘blue’ when it rains, I’m often filled with euphoria. Why? Because I get to be creative with the photos I take.

As some of you may have seen before, I took pictures when it was foggy in daylight. A few months ago my friend I and decided to take advantage of the rain and fog at night.

“I am a firm believer of staying true to my word (which may end up to be pretty ironic by the time I have written this). I’d like to hope my reputation will precede me. To me, being a man or woman of your word requires a certain level of responsibility and respect towards such person you are promising to. Growing up I was always big on honoring the promises I would make, but I was never verbally taught to do so. Funny enough I guess I learned through actions, more specifically those of my parents. I remember one of the best promises I made with my parents was when I was about 7 or 8 years old. The promise was in exchange for me doing good in school, my parents would get me a dog for my birthday. I named him Biscuit. Nowadays words mean very little in this generation with our actions simply being ones and zeroes. It might just be me but I find it pretty sad that we’ve allowed social media to be used as a form of (what is supposed to be genuine) expression for our family, friends, and loved ones. It pretty easy to spot, the all-out essays written for birthdays, anniversaries, and other special occasions. In order to be a man or woman of your word, you have to take action. If there’s anything I’ve learned is that promises mean much more from those that don’t need to.”

Brunch at Manila Social Club

My boyfriend, friends, and I had brunch at Manila Social Club located on Hope Street in Williamsburg, Brooklyn. The cuisine is Filipino/French. We made reservations for noon on a Sunday and surprisingly, it wasn’t crowded at all. The restaurant was very clean, simple, cozy, and relaxing. The staff are very friendly, super nice, and laid back. Brunch is usually crazy, busy, and feels rushed, but when you come to Manila Social Club – it just feels relaxing and not rushed. It was such a wonderful experience that I didn’t want to leave.

We were given complimentary biscuits and ube butter. These were probably the best biscuits I’ve had so far because they were fluffy and had a little sweetness to it. The ube butter complimented the biscuits very well. The ube butter was unlike anything I’ve ever had. It had a smooth and melt-in-your-mouth texture, not too sweet. I really liked this!

My boyfriend ordered the Tres Leches (espresso, milk, Dulce de Leche, whipped cream). This drink can be served iced or hot, but my boyfriend got it and hot. This was an interesting concoction in terms of taste and I also think it would taste a lot better if it was iced. I got the Ube Latte (ube infused with simple syrup) and it can be served iced or hot. I got it iced and it was interesting. It was a little too sweet for me even when I mixed it. I liked that Manila serves most of their drinks in cute mason jars!

We ordered three appetizers.The Lumpia Shanghai are Filipino egg rolls filled with duck and longanisa (sausage/chorizo). It came with two types of sauce – one was spicy and the other tasted like a fish sauce. The Lumpia Shangai were crunchy, fresh, and yummy!We also had the Longanisa Sliders which are sliders with daikon pickles and lotus chips. The Longanisa Sliders were adorable, moist, and just really delicious. Who would ever  though lotus chips would or could taste so so so good? The Spam Fries is listed as a side dish under Manila’s menu, but we treated it like an appetizer. I almost always order Spam Fries at a Filipino restaurant. First off, love love love the presentation and creativity behind it. The Spam Fries weren’t salty at all. I wonder what was their secret to making some of the sodium diminish.

My boyfriend loves mango and he’s a pancake type of guy. The Mango Souffle pancake looked like a giant,fluffy cookie with chunks of mango embedded inside. I tried it and loved every bite of the pancake and there’s that Ube again, extremely yummy!

My boyfriend & our friend ordered the Garlic rice as a side dish. We all felt it was a little bland and definitely not enough garlic flavor in the rice.
Roasted Vegetable Paella

One friend ordered the Roasted Vegetable Paella which looked absolutely vibrant, inviting, and hearty. The paella tasted yummy and is a good vegetarian option if you prefer something vegetarian.

My girlfriend and I ordered the French Toast Espesyal. The French Toast is deep-fried with black & blue jam, mango syrup, and macapuno ice cream (coconut). I don’t typically order sweet dishes like pancakes, waffles, or French toast for brunch, but this sounded really good. In my own opinion, I kind of regret ordering this dish because it was just too sweet for me. and very filling.

We also ordered the Longanisa Hash as a side order too. Everything was cut into perfect bite size. The Longanisa Hash was delicious and just full of flavor.

Overall, it was a delightful experience at Manila Social Club. I definitely want to come back and try their dinner menu some time. I would most definitely come back to Manila Social Club again and it’s definitely one of the best restaurants I’ve been to in Williamsburg. There’s really something genuine about Manila Social Club!

Things I want my Daughter to know: Take root in your Principles

As I continue to make my way through the colorful world of adulthood, I’ve realized that sometimes you’re forced to choose between your principles and your social or economic wealth. Though it may seem far off or something the people you call friends or peers would never do, trust me little girl one day they will. One day you’ll be out for the first time without me, exploring your new found freedom at the movies or at the beach and one of your friends will suggest something far outside your comfort zone. You’ll have 1,000 thoughts fly through your head and you might even hear my voice telling you not to think about it but then the fear of loosing out on friendships and future invitations flashes in red through your mind.

Fast forward 15 years and you’re sitting in the waiting room for a job interview fresh from college. The interview goes great but upon receiving the job offer you realize that this company has a lot of unfair business practices and you know you won’t be happy here for long. The salary however persuades you to consider it.

My point here Ava is be it 12 years old 27 years old or nearing 90 you will always be forced to choose between what is easy and what is right. Realistically, it seems obvious and cliché that as your mom I’m going to tell you to choose right from wrong, which may not necessarily be easy. Yes, as your mom, it is my job to teach you and tell you what’s right. However, I would be a hypocrite and I wouldn’t be doing you justice if I wasn’t honest in telling you I have not always succeeded in choosing right but I can tell you that having done both; right is always best.

Through my teenage years I suffered from your typical teen angst and rebellion but I was also searching for myself, searching for where I belonged and my purpose. I found that purpose when I became your mother. Albeit I was young and having you propelled my life forward 100mph, it took me some time to get my feet out of the mud but knowing you were watching me pushed me onward. So now when I’m faced with two options either that easy A or that hard earned B, I go for B.

I go for B because I have learned that money is not happiness, though it makes life easier, a job where you’re not happy is not an accomplishment. I have learned that friends, who put you down, mock or ridicule your dreams and ideas are not your friends, they are toxic to your life. Standing ground in who you are and what you stand for makes you stand that much taller, it validates any hardship you may weather and most of all it makes you authentic.

Authenticity is an endangered quality in today’s society so if I can give you one piece of advice it is to be who you are, to stand by the values you hold true because those same people who pressure you tend to leave you in times of trouble. Your “most authentic” you is who you see every morning in the mirror, never be ashamed of her, never be ashamed of your passions even if they push you to pursue a completely different paths than you’ve ever know before or set you apart from the rest. That is okay; the road less traveled has the most abundant fruit. That my dearest little girl is how I am here today, writing to you, writing for this blog. I took a leap of faith I pursued what I have always loved to do, write, create and envision. It has brought me great success and I know that one day the things you love and are passionate for will bring you the same if you always remember your guiding principles are yours and yours alone and not one soul on this earth has the power to reroute or alter them except you.

Exploring Bridges

Some people see bridges as just simple structures, but if you think about it, bridges are much more than just a structure. Bridges are what make our world to be connected together, where people can cross and see the other side. Bridges are specifically built to bring places and people together, to explore the world and to expose ourselves to the unknown.

I’ve always been fascinated with bridges, walking on a bridge is something that I have always enjoy doing. Up there is very peaceful and the view is breathtaking. There’s something thrilling about being between two different places and having to be surrounded by water. Also of course if you are not afraid of heights, walking across a bridge such like the Brooklyn Bridge is such an amazing experience.

The Abundance of Food Trends

Everyone knows how easily a particular subject can gain attraction and become a viral sensation. From Justin Bieber to Grumpy Cat, it is apparent how rapidly a topic can rise to fame and for all to want to be able to partake in if only for a while before the short-lived fame begins to die down. This is even more crucial for food establishments as it may only be available for a short period of time before being completely taken off the menu. Food trends are probably the one of the best viral sensations to occur because it highlights the similarities of many people’s taste preferences. Everyone will spend not only their hard-earned money but their time in line with many others simply waiting for their turn to have the chance to feast on this thriving food product.

Food trends really began to soar in 2013 when the Cronut (a portmanteau for croissant and donut) was born in Dominique Ansel Bakery; it was the one food item that everyone wanted to taste and would wait hours in order to taste it even if there was a significant chance they would be turned away if the product sold out for the day. Ansel continued to surprise us with his confectionery masterpieces which included the chocolate chip cookie shot and a few other desserts. From then on, it was the cruffin which was another portmanteau for a croissant muffin which is readily sold at Mr. Holmes Bakehouse in San Francisco, the rainbow bagels from the Bagel Store in Williamsburg, and many other foods.

But the newest food trend is one that was discovered in New York just this year which is the Cinnamon Roll Stuffed Donut. Although it sounds insane many describe it as a delicious dessert. Chef Thiago Silva of Catch Restaurant located in the Meatpacking District of Manhattan created this dessert as part of his extensive dessert menu. It has received lots of praise and continues to as many come to visit his restaurant in search of this new food trend. Below, I have a recipe for the donuts, if any dare to try to recreate it in their own homes.

Cinnamon Bun Stuffed Donuts

Ingredients

  • Vegetable oil, for frying

Dough

  • 2 packets yeast (4½ tsp.) I use active dry.
  • ½ cup warm water
  • 1 tsp. sugar
  • ⅓ cup vegetable shortening
  • ¾ cup soy milk
  • ¼ cup sugar
  • 1 tsp. salt
  • 4 cups flour
  • 2 eggs

Filling

  • 2 Tbs. margarine, melted
  • ⅓ cup brown sugar
  • ¼ cup sugar
  • 1 Tbs. cinnamon

Icing

  • 2 cups powdered sugar
  • ¼-1/2 cup water

Instructions

Dough

  1. In a small bowl or measuring cup, mix the yeast with the warm water and 1 tsp. sugar. Stir until no longer lumpy and set aside to proof and bubble up; 5-10 minutes.
  2. Meanwhile add the ¼ cup sugar and the salt to the bowl of an electric stand mixer.
  3. In a microwaveable bowl warm the vegetable shortening with the soy milk until the shortening has melted. Pour the shortening/milk mixture over the sugar/salt mixture and stir to melt. Allow to cool until lukewarm.
  4. Add the flour and eggs into the mixer bowl. Then finish off with the yeast mixture. Mix on low using the dough hook until the dough comes together. Once it’s pulling off the sides of the bowl, set the mixer to medium low and mix for about 6 minutes.
  5. Grease or oil a large clean bowl and scrape the dough mixture inside. The dough will be sticky, but don’t add flour! Grease your hands to better work with the dough.
  6. Cover in plastic wrap and set in warm place to rise for one hour.
  7. Once the dough has risen, cut off ⅓ of the dough (about 12 ounces if you have a kitchen scale) to make your cinnamon buns. Set the rest of the dough in the fridge.

Cinnamon Buns

  1. Grease a 12 cavity cupcake pan and set aside.
  2. On a well-floured surface roll out the dough you just portioned off. Roll it into a rectangle about 12″ wide and 6″ tall.
  3. Melt the margarine and brush over the dough.
  4. Sprinkle the dough with the brown sugar, sugar, and cinnamon. Roll the dough into a log, you are rolling the long side up so your log is still 12″ long.
  5. Once rolled up use a serrated knife or bench scraper to cut the buns into 12 pieces.
  6. Place each bun in one cavity of the cupcake pan, cut side up/down.
  7. Cover with a kitchen towel and allow to rise for 30 minutes.
  8. Meanwhile preheat the oven to 350 degrees F.
  9. Once the buns have risen, bake for 10-12 minutes until just lightly brown. You don’t want to overbake-these will still be fried.
  10. Remove the pan from the oven, let cool for 5 minutes and then carefully pop the buns out of the cupcake pan. The sugar will be extremely hot so your best bet is to flip them out onto a parchment lined cookie sheet.
  11. Allow these to cool completely.
  12. Once the buns are cool, remove the reserved dough from the fridge.
  13. Divide the dough into 12 portions (just under 2 ounces each). Flatten each piece, I used well-floured hands but you could use a rolling pin.
  14. Place one bun pretty side down on the flattened dough. Carefully wrap the dough over the bun and pinch the seams together at the bottom.
  15. Set the donut to rise seam side down on a floured parchment lined baking sheet.
  16. Once all 12 donuts are formed, cover with a kitchen towel and allow to rise for 30 minutes.
  17. While the donuts are rising, heat your cooking oil. I use vegetable oil but use any oil with a high smoking point.
  18. Heat your oil to 350 degrees F. Proper temperature is everything: too cold and your donuts soak up all the oil and become greasy. Too hot and your donut is burning but the inside is raw.
  19. I use a deep fryer because it will regulate the temperature for me, if you don’t have one-make sure you have a really good thermometer and keep a close eye on it.
  20. Fry the donuts for about 1 minute per side.
  21. Carefully remove from the oil and drain on a sheet pan lined with paper towels.

Icing

  1. Once your donuts have cooled (if you haven’t eaten them all yet) measure the powdered sugar into a bowl.
  2. Slowly add a bit of water at a time until you have a thick icing consistency. I went thick with these but you can thin the icing out more if you are looking for more of a glaze.
  3. Dip, drizzle, or pour the icing onto your donuts.
  4. Sprinkle with extra cinnamon for an added touch and enjoy!

But I would still advise going to the actual bakery to taste the original, not necessarily because it will taste better, but because sometimes the sheer anticipation of waiting in line and buying this widely talked about product adds to the delicious flavor. It makes it all worth it in the end of it after the time and money spent on it.

Views From The Tram

As you all know I have a Phobia for heights. When I started taking photography seriously two years ago, I decided that one of my many goals was to conquer my phobia for heights. So far I’ve been on a few rooftops; ‘the view is to die for’. The tram, I’ve been on many times. Although I still get a bit nervous, the amazing views help get rid of that and of course taking pictures.

The Tram is an aerial tramway that began operation in 1976. It spans in the east river and connects Roosevelt Island to the upper east side of Manhattan. Not run by the MTA but by LPOA (Leitner-Poma of America) . However it’s uses the MetroCard system. If you’re wondering whether it’s the only way to the Island, no it’s not. Mass transit can be used and also other vehicles but why? When you can have fun using the tram.
