I’m interested in the perspectives of the workers, whose voices stand silent in this article. I’d like to know more about the rich culinary tradition of a place like Oaxaca and how it is rooted in the genius of indigenous people. I’d like to know what race and class of person is having this debate, and how the people on the ground which are going to to have to deal with cultural shift towards something similar to the Napa Vally will do. I’m wondering how will it affect their welfare. Will they have ownership of progress? How will it be granted to them? And what happens, when people tire of mezcal and it no longer is read as exotic?
