As the photos go from left to right the white highlight- the direct reflection- actually gets harder and more prominent. this is the opposite of what should be happening. Your first photo is better.
When you use the side light, that is the light that you need to diffuse. Since the jar is not transparent and we need to see the label, we don’t use a back light.
