Food Truck Project

The food truck project will ask you to create a concept for a New York Food truck.  This will involve:

  1. assembling a menu
  2. creating “standardized” recipes for the dishes on the menu
  3. creating a spec sheet for the “center plate” ingredient on each menu item  (see http://kc.sysco.com/products/product_guides/food_bev.pdf as an example)

The food truck will be based on an existing Brooklyn restaurant.  Choose one from the following two articles–there is some overlap.  Since each group needs to choose a different restaurant, choose a second option.  It’s first come, first served.  The early bird gets the worm…or barbecued pulled pork slider, as the case may be.

The final project will consist of

  1. a written portfolio assembled by each team that includes the concept, menu, facilities, spoilage, ease of eating and target market (see rubric).
  2. one standardized recipe and one spec sheets each written by individual team members (see templates below)
  3. an oral presentation shared equally among the team member
