Sponge Cake

Sponge Cake is a common thing in the pastry world.  They can be tasty, light, and airy.  Or bland, dense, and rubbery.  During our walking tour today, I tasted a sponge cake from Chinatown.  It was everything a Twinkie wanted to be.  The cake was super airy, like no cake I’ve ever tried before.  Each bite was like taking a piece out of a lightly sweetened cloud.  The cakes are steamed, which preserve the moisture of the cake while providing it with its light texture.  I may have to frequent Chinatown for my new addiction…IMG_0786

    MOMO

    Momo is a dumpling that is steamed or fried and has a filling of either beef, chicken or vegetable. The shape of the Momo is similar to Dim Sum however the pastry on the Momo is thicker and has more of a doughy texture. I tried the beef and the vegetable. Interestingly enough the vegetable used in the vegetable momo tasted much like collard greens. Not a fan of the MOMO. Dim Sum I will try again, not so sure about this.
