Nouvelle Cuisine: A modern style of cooking that avoids rich and heavy foods. Nouvelle cuisine, emphasizes the freshness of the ingredients and the presentation of the dishes served.

What I learned about nouvelle cuisine is that it’s characterized by a lighter and more delicate dishe. Its also focusing on presentation rather than strong flavors.

I first heard this word when reading chapter 6 when it mentioned “nouvelle cuisine being popular back in the late 1960’s and early 1970’s. Nouvelle cuisine is based on simple preparations, using more natural flavors and ingredients. Instead of using roux, a vegetable pure is used instead.”
