Fusion – is the blending of flavors and techniques from two cuisines.

Source – Thomas J. “Without the right skills, chefs who experiment with fusion cause culinary creations to fall apart.” Nation’s Restaurant News, vol. 40, no. 20, 15 2006, p. 30. Gale General OneFile

Quote from the article – “Today, many restaurants, clubs, and other foodservice venues are attempting to be trendy by adding fusion-style dishes. assuming that the spices and sauces will enhance and not detract from the experience. What happens when untrained cooks attempt to be too exotic is a battle that makes the Hatfield and McCoy feud seem tame compared with the war of flavors destroying the plated protein”.

My thoughts – Taking ingredients from two separate traditional recipes and combining them into one dish. Understanding fusion-style food is critical in order to please customers; otherwise, a single element might negatively impact the meal.
