Waiting Tables at Top-Tier Restaurants Is New Career Path for Foodies

http://www.wsj.com/articles/SB10001424052702304137304579292350943682222

Great article and I had to share it. I have been paying the bills now by waiting tables. It’s flexible, you canĀ make great money,Ā  and you learn a lot ofĀ invaluable skills.Ā I think it’s important for those who want to be in the food and beverage business to understand how a restaurant works, and being a server allows you to experience it all.

Especially if you get the opportunity to work for the top fine dining restaurants. You can certainly make a career of it, especially of one doesn’t want a managerial role.

Two Employees, One Michelin Star

http://luckypeach.com/two-employees-one-michelin-star/

“One of the most striking things about Take Root is that there is no kitchen staff: itā€™s just Kornack. ‘I realized that I didnā€™t really like the kitchen life,’ she said, referring to her time in the kitchens of the Spotted Pig and Aquavit. ‘I didnā€™t like the camaraderie of it. Iā€™m not a team-oriented person; I am not terribly social. It wasnā€™t really my gig. But I really wanted to keep cooking, and I wanted to cook for people and create, and continue to do that.'”

It’s nice to know there is a place in this industry for people like Chef Elise Kornack who doesn’t identify herself as someone who’s outgoing andĀ team oriented. I think I can relate.

Industry Research #1 -NYC Cooking Classes

Published in March 2015 CBS Local online suggested if an individual wanted to improve their home cooking skills or perhaps open up a business of their own one day, then these are 5 businesses one should take a class at to manifest those dreams.

Kid classes, cupcake classes, dissecting a pig class, you name it and you can take a class for it. It is the same at my internship just in a more intimate setting.

Industry Research post 1.

This article caught my attention because its very important for the environment and because the restaurant I am interning at is one of the restaurants awarded by the Green Restaurant Associates for being Green so it hits close to home. I like that the article gives you a link to the list of Green Restaurants and also gives you a link to find out if your favorite seafood is sustainable.

Quentin Bechard is the Junior UK Chocolate Master 2015

I personally found this article interesting because I volunteered for the U.S. Pastry competition this year and I’ve seen amazing chocolate work. This article explains how a young pastry chef from a luxurious hotel in London won first place at the Junior UK Chocolate Masters. All contestants were young from ages 17-23 and I think it’s amazing to see young people making incredible chocolate pieces, just like the ones I saw at the pastry competition here in NY. This article inspires me to always do my best if I ever want to be as good as this young chefs.
