Objectives
- Modeling the format of objectives listed on the syllabus, write two learning objectives you will work towards during the apprenticeship.
- Upon approval by the course instructor, the objectives will be shared with your apprenticeship supervisor and acknowledged by the supervisor indicating approval.

Read and React
Students will “Read and React” to excerpts from The New Rules of Cheese, by Anne Saxelby. Listed here are the excerpts, students are asked to react to. The reactions will be in the form on a post, learn how to create a post here. Title your post to match the “rules” listed. Use the category “Read and React” before submitting the post.
Rules 36-42
As you begin your apprenticeship, there will be a significant learning curve. Read rules 36 through 42. How does your practical experience bring to life the words on the pages? Be specific and reference at least four of the rules in this section.
Rules 3 and 4
Cheese your own adventure. It is likely that you are tasting a lot of cheese. Share your tasting notes. First explain the type of cheese you are tasting (refer to rule 4 or your own developing knowledge) then provide tasting notes, serving instructions, and beverage pairing suggestions.

Making connections to the liberal arts. At City Tech, we offer a comprehensive technical hospitality degree along with a general education courses. In the book Saxelby makes connections between the liberal arts and cheese. Choose one of the rules (46, 47, 48) and expand on her writing by tapping into your own liberal arts education.
Story Telling
Weekly Reflective Photo Journal entries are to be posted on the OpenLab site addressing issues of personal growth, achievements, and challenges faced throughout the Apprenticeship. Submit entries to the Weekly Reflective Journals section of OpenLab. Consider the story you are interested in telling and the questions presented below.
The reflections will be in the form on a post, learn how to create a post here. Title your post as Week 1, Week 2 and so on. Choose the category “Story Telling” before submitting the post. Reflective journals can be marked private.
Story Telling Prompts
Select from any of these prompts. It is preferred that students use a different prompt for each reflective story but any one prompt can be used twice.
- What the one thing you particularly want people to notice when they look at your work?
- What might want more help with?
- In what way did I perform differently this week than the prior week?
- In what ways have you gotten better at work?
- What problems did you encounter this week? How did you solve them?
- What were your standards for the work you did this week? Did you meet your standards?
- What did your work this week reveal about you as a learner? What did you learn about yourself during the process?
