This course particularly peaked my interest because of the guidance and instruction provided by Professor Murcia. He made the class both interesting and fun to be apart of. Though he was very strict on his work and how he wanted the entire operation to run, he was very thorough and explained where everything was and why. In this class we learn to be every part of a fine dining restaurant worker, from dish washer to maître d’. Each week everyone was assigned a new position and was to come dressed accordingly. My favorite task was front waiter. This allowed me to interact with the guests at my tables and demonstrate what I had learned through the course of the semester. As our final project we were separated into groups of four and asked to create our own themed table with a set menu. My group and I choose “The Great Gatsby” theme for our table because the theme of the books take on hospitality as well as extravagant decor. Our group felt very accomplished with what we had done and confident in our menu options.
