The three controls you have on a gradient are Linear Gradient, Radial Gradient, and Freeform Gradient.

The three ways of changing the color of the gradient stop are using the color picker, dragging and dropping and entering color values. By using the color picker click on the gradient stop and a color box will open. You then choose your desired color. Using drag and dop you can choose a color from the thrumatch box that is found in the swatches menu. You then choose your desired color and then drag it to the box with the plus sign on the gradient slider. For the color value you select the gradient stop and enter the color values in the desired box.
