Weekly Homework

Answers to the questions below should be thorough and express what has been learned by reading the chapter’s material. When you answer the questions, consider the text as well as your own academic and professional experiences.

Week 2:  Tuesday, September 3, Textbook Chapter Chapter 1, pgs 3-23

  • Chapter Review Question #1
  • Write about what learned about the history of hospitality and explain why it was significant to you?
  • Would you or would you not want to visit the place written about in the current NY Times “36 Hours in…” article? Explain why you will or will not go.
  • Join the OpenLab and complete the eProfile assignment

Week 3: Tuesday, September 10, Textbook Chapter Chapter 1, pgs 23-46

  • Using examples from Disney’s Approach to Guest Service, describe a time when you experienced “Disney Like” service.
  • Think about the information presented in the chapter and then conduct a self assessment of yourself. What will you do during your college years to develop the traits needed to work in the hospitality industry?
  • Would you or would you not want to visit the place written about in the “36 Hours in…” article? Explain why you will or will not go.
  • Upload your “Our Stories” post to the OpenLab
  • On a separate piece of paper(this is preparation for the industry research assignment)
    • Identify a segment of the hospitality industry you wish to build your career. Make a list of three trends in that segment of the industry. What supporting information can you provide to support the trends you identified?

 Week 4: Tuesday, September 17,  Textbook Chapter #9

List and explain the common types/categories of tourism as explained in chapter 9.

List and explain the goal of three organizations in the tourism industry.

Would you or would you not want to visit the place written about in the “36 Hours in…” article? Explain why you will or will not go.

The Industry Research Assignment is due.

Week 5:  Tuesday, September 24. Textbook Chapter #9, Meet at the Brooklyn Bridge Park at 8:45am

  • Chapter 9 review question #2
  • List four terms from the chapter that were new to you and explain how they are used in the industry.
  • Learn more about Tourism in Brooklyn by reading The Brooklyn Tour Guides Who Know All the Secrets
    • Answer the following questions: 1) Thinking as a director of tourism for the Brooklyn Chamber of Commerce, identify four areas of tourism that were communicated in the article? 2) What opportunities for growth do you think are possible?

Week 6: Tuesday, October 15, Textbook Chapter 2

  • Chapter review question #2
  • List four terms from the chapter that were new to you and explain how they are used in the industry.
  • Read  the “36 Hours in…” article? Be prepared to discuss how a tourism director from the area would utilize the information in the article.

Week 7:  Tuesday, October 22, Textbook Chapter #3 and #4,  We will meet at the Knickerbocker Hotel, see Site visit tab for more information

  • Chapter #3 and #4 review question #1
  • Chapter #3 and #4 review question #2
  • Familiarize yourself with the Knickerbocker Hotel and the details of the site visit
  • Consider the information that was presented in the chapter reading. Write two questions you wish to ask a hotel manager.
  • Read (no need to write)  the “36 Hours in…” article? Be prepared to discuss how a tourism director from the area would utilize the information in the article.

 

Week 8: Tuesday, October 29, Textbook Chapter 4 and 6

In each chapter identify 12 words or terms that were new to you, define each word in detail.

Identify a job in the field of food service or restaurant management as it is explained in the textbook. Referencing the information in the chapter, in what way do you believe you would find success in this position?

Week 9:  Tuesday, November 5, Chapter 7 and 8

  • Chapter 8, Review questions #1
  • Chapter 8, Review questions #3
  • What inventory controls are important in a F&B operation? Why? Use terms from the text to explain all  your answers.

Look through The Companion for First Year Students at City Tech. Which section is most relevant to you?

Activity #4 of The Companion, page 25, is “Track Your Learning Success” complete this activity for this week and bring the entire section to class.

Week 10: Tuesday, November 12, Chapter 10 

  • Identify 12 words or terms that were new to you, define each word in detail.
  • You have been promoted to the Assistant Director of Adventure Tours. Identify two national parks with distinctly different characteristics (one should be in New York State). Write a memo to the Director explaining why these two parks should be added to your list of tour options.

Week 11, November 19, Group Presentations

Concierge assignment due

No chapter reading, continue to read the NY Times 36 Hours… column and prepare for a discussion.

Week 12, November 26

For chapter 12 and chapter 13, identify 12 words or terms in each chapter that were new to you, define each word in detail.

Identify a job in the field of Meeting and Conventions Management as it is explained in the textbook. Referencing the information in the chapter, in what way do you believe you would find success in this position?

Week 13, Tuesday, December 3

Site Visit to Shake Shack Innovation Kitchen

  • For the list below, identify if the information is related to the Four Points or Courtyard brand or both and briefly explain your answer. Do not guess, use the textbook and the Marriott website for information.

    • Offers various food and beverage options
    • Provides seating areas in the lobby
    • Offers online check in
  • Learn about Shake Shack
    • Read “Our Story“: High light thee important moments in the companies history
    • Read the 2018 Annual Report, specifically pages 51-54 and summarize what you read.
  • Consider the information presented in chapters covering culinary, restaurants and food service and what you read about the company,  write two questions you wish to ask Mr. John Karangis, Executive Chef.
  • Read the NY Times 36 Hours article

Week 14, Tuesday, December 10

  • First, think of a leader you admire and know personally, make a list of their qualities.
  • Next, read the article Seven Transformations of Leadership. What type of a leader is the person you admire?
  • What have you learned about your own leadership qualities based on those of the person you admire? Explain, your answer using terms you have learned this semester.
  • Visit Hcareers.com, bring in a job description for a job you would like to attain in the next six months. Also, bring in a job description for a job you would like to attain in the next 12 years. Identify the skills you will need to develop over time to secure this position.

Week 15, Tuesday, December 17

  • Review the prompt and upload your second “Our Stories” post to the OpenLab
  • Prepare for Accounting Taboo by reviewing the definitions of the terms provided.
