HMGT 1101: During the Food and Beverage lectures on October 22 and October 29, discuss  the terms presented throughout  Anthony Bourdain’s Kitchen Confidential, specifically in the section “From Our Kitchen to Your Table”. WEEKLY NYTIMES

Students will read the NY Times Travel section each week and prepare notes for in-class discussion.

b. Gather information from observation in regard to the hospitality industry from a local, national and global perspective (Gen Ed: Inquiry/Analysis)
