Smarter Iced Coffee
Ingredients
1/2 – 1 cup ice
1/2 cup coffee, cold
1/2 cup any milk (1% skim or unsweetened almond)
1 tsp pure vanilla extract
Optional 1 tsp cinnamon

1 Coffee brewer
1 Long Spoon
1 Large cup
Instructions
1.Brew coffee normally. Allow for it to cool down for a minute.
2. Add coffee, ice, milk, vanilla extract to cup.
3.Stir with long spoon, adjust to taste.
Left over coffee can be refrigerated for up to 2 days. When ready to use, combine all ingredients and make a healthy iced coffee.

Vodka Mojito
Ingredients
4 Fresh Mint Leaves
2 tbsp Lime Juice
2 g Granulated Stevia
Ice Cubes or Crushed
1 shot Vodka
1 splash Club Soda
Lime Slice for Garnish (optional)

Instructions
1.Using a fork, smash fresh mint leaves with lime and add Stevia.
2.Fill glass with ice of preference.
3. Add shot of vodka.
4. Add a splash of club soda.
5.Garnish with a lime slice and mint.

Chicken Fajitas
Ingredients
1 tablespoon extra virgin olive oil
1 large red or white onion sliced
1 red pepper sliced
1 yellow pepper sliced
14 1/2 oz skinned chicken breasts strips
1/8th teaspoon paprika
1/8th teaspoon mild chilli powder
1/4th teaspoon cumin
1/4th oregano
4 soft whole wheat flour tortillas
1/2 iceberg lettuce shredded
For Tomato salsa
1 small red onion, finely chopped
14oz small vine-ripened tomatoes
2 garlic cloves, crushed
Large handful of fresh cilantro, chopped
Ground black pepper

- Make the tomato salsa first. Mix the onion, tomatoes, garlic and cilantro in a bowl. Season with black pepper, then cover and chill for 30 minutes.
- In the pan, heat oil. Add onions and peppers. Stir-fry for 3-4 minutes. Add the chicken, paprika, chilli powder, cumin and oregano. Allow chicken to cook for 7-8 minutes.
- Serve chicken mixture into the centre of each tortilla, add tomato salsa and shredded lettuce.

Ingredients
6 tablespoons light brown sugar
1 red small apple, cored and diced
7oz of chopped blackberries
1 teaspoon of ground cinnamon
8oz plain whole wheat flour
4 teaspoons low sodium baking powder
2 eggs, beaten
4fl oz skim milk
4lf oz rapeseed or canola oil

Steps:
1. Begin by mixing together the sugar, diced apples, blackberries and cinnamon in bowl.
2. In the second, mix the flour and baking powder.
3. In the third bowl mix together the eggs, milk and oil.
4. Pour the third bowl mixture into the second bowl mixture and blend.
5.Stir in the fruit mixture and do not over mix.
6. Place muffin fluting baking cups in 12-hole muffin tin with paper muffin cases.
7.Preheat oven 400F
8. Evenly divide mix into each cup.
9. Allow 20-30 minutes of baking.
10. Allow for muffins to cool before cooling.
