Reasons to Care:

Bees do many things that help the human population indirectly, some of these consists of pollination, providing food in form of honey, and helping vegetation grow, which in turn helps animals have food to eat. Which then leads back to humans who eat the animals for food.

Honey:

Can be used a sweetener for you drinks and the food that can be eaten, would be lost without the Honeybee.

Diet:

Bees pollinate etc amount over course of etc. This impacts how much food is being produced a year, without bees, no food. Especially when the human population continues to increase and with starvation already taking place in some countries, its only a matter of time starvation effects all of us if bees are taken away too.

Food Chain:

If Bees went extinct, animals like birds or other animals will no longer have a food source, this could lead to a dramatic change in the food chain causing many species of animals to be impacted by.
