My Courses
This course provides an in-depth evaluation of âNew Worldâ viticulture and vinification. Wine making methods, service, laws and regulations of the major wine regions of North America, Australia, New Zealand, Chile, Argentina and South Africa will be studied. Students will taste and evaluate wines. Supported by a grant from the Julia Child Foundation, student will make wine at Red Hook Winery. Prerequisite: HMGT 2402

Restaurant Management Final Project – Esqueletos
Final Project Description: This is a real-world application of starting a restaurant – as a team. Pretend your team has been hire by a restaurant investor to develop a restaurant concept for Downtown Brooklyn. This is a competitive exercise. Your research and presentation will be judged by the restaurant investor based on the following components. Your research and presentation must include the following: Restaurant Concept, Competitive Set, Marketing Program, Beverage Program, Location Justification, Training Video.
Event Management Final Project – Frost Bites
Final Project Description: You are the event director for your final project. You will plan a food and wine fund-raising event including many aspects of event management based upon the requirements by the client.
