What To Eat Next: Tofu Banh Mi
Who doesn’t find lunch to be a conundrum? At MfL, we are always looking for simple, quick, and healthy lunch options, which now include our Tofu Banh Mi. To make this, you will need two slices of tofu, half a cucumber, a carrot, a few cilantro stems, Sriracha, vegetable butter spread, and two thinly sliced pieces of toasted bread. We also recommend sauteing the tofu for three minutes in 1 t. tamari, 1/2 t. honey/agave, and 1/4 t. Sriracha. Enjoy!
