Chef of week #9 , for my vegetarian class

During week number Nine, I was the chef of the week. The item we had on our  menu was Tempeh, which was used in each one of the five dishes we made that night in vegetarian class.

The question is “What is tempeh?” It is a soy product which originates from Indonesia. Tempeh contains high levels of calcium and potassium. It is made by a natural culturing and controlled fermentation process that binds soybeans into a cake form. This provides the dishes with an unique texture, however the tempeh must be marinated to absorb more flavor.

The tempeh itself does not have much flavor but light nuttiness. This week every group was responsible to incorporate tempeh in all the different styles of preparation. The outcomes were fantastic because of the presentation and the great flavors tempeh had acquired after the marination process . In my opinion, the tempeh texture was very similar to chicken meat. Since this was a vegetarian dish, we did not use any meat products in our dishes. Most importantly, the dishes still taste delicious and full of nutrition value.

Organic Tempeh
Group#1: Glazed maple tempeh strips with sauteed kale and corn and Sweet potato mash. The sweetness from the maple syrup has helped the tempeh with glossy appearance and meaty texture. The sauteed kale and corn has refreshing flavor as the side.

Group#2: Tempeh with mole ,squash mousse and green beans with shallots. The green beans has great crunchy texture with creamy squash mousse next to the tempeh, which has balance very well.

Group#3: Tempeh with coconut curry and basmati and Slaw. This dish was like a super summer happy color dish, which contains so much flavors and vibrant colors.The coconut and the curry was creamy and on point.

Group#4: Stuffed poblano with sauce and Swiss chard. The poblano pepper doesnt have strong spicy flavor and perfect shape to stuffed the tempeh. The plating was very elegant with just green, orange and tempeh color.

Group#5: Tempeh scallopini with red pot and asparagus. The temeph scallopini was delicious because it was first marinated then pan fried and then coated with the reduced sauce. Far distance, the dish looks like BBQ spare ribs. On the plate itself, has three different texture food, the crunchy asparagus and  saffron risotto.

The class had done great job with different recipes to have the amazing outcomes. At the end of the class, we enjoyed the meal we have prepared. Things we have added extra or reduce during the process.  Plating has definitely played an important role in cooking because a beautifully plated dish was more interesting to the eye.  Often time, we chose what stands out to our eye.

As conclusion, Art of vegetarian cooking not only provides healthier food and can be delious too.

My Journey in applying for Disney College Program-Part 1

If you are part of the Hospitality Management major, then you probably have seen the Disney College Program poster, post card or small business card somewhere on the second floor of N building. Even if you are not a hospitality student, you might have seen some where inside the N building. It is a purple poster with Micky mouse on it, really easy to recognize. I mean, the posters are literally EVERYWHERE inside the N building. DCP Stands for Disney College Program. I have always wanted to be part of , which i have finally gotten accepted to the upcoming Fall 2016 program after few tries and fails  . ( DO NOT give up  if you did not get in the first time !)   I want to write a blog post to share some of the things that I’ve learned during the process. For those of you that also interested to be part of the program, Hopefully my experience will help you in someways. Definitely do more research about the program before you apply . Keep in mind that once you get the program, you will be leaving your home to live on your own. However, this  is an amazing internship opportunity that allow one to gain so much hand on experiences of the hospitality field and  much more . Have I mentioned this is a PAID INTERNSHIP that every college students are qualify to be part of ? Super excited to share this journey with you all.

Alright, let me begin my experience in applying for the program! This is specifically targeting the Florida, Walt Disney World….Everything in this post is based on my own opinions and own experience. There might be slight differences because we are all unique individual that have different strengths and experiences and way to handle situations .

Few semesters back, when I first started my study in Hospitality Management.  After reading through the pile of papers  regarding the different workshops, the programs, Disney College program has caught my attention right away.  ( I mean, about 5+pages, a pile is a little over exaggerate, you get the point, lots papers) .I’ve  gotten lots papers from the Hospitality department, I almost immediately decided that I  want to participate the DCP, aka Disney College Program.  Long story short, I talked  to friends about the program and have learned more in details about the program. As a hospitality student, it means so much to be part of the program. Not only enhance your knowledge, experience and make your resume stands out more.  I have talked to Prof.G ( the one professor who knows all about the program in our major. She is so patient, super nice , which she answered  so many questions that i have ). Ps: Do not forget to make appointment ahead of time. 

Spring/ Spring Advantage Program , Fall/ Fall Advantage Program.

During Spring, you may apply for the Fall/ Fall Advantage Program, and During Fall you may apply for Spring/Spring Advantage Program. The main differences between Regular program vs Advantage is that the Advantage program has extra few months more than the regular program. You may only allow to apply  and submit one application for either spring or fall.  In other words, you may only reapply twice every year, one per season. ( Spring and Fall, then you can choose either the regular program or the advantage program).

You have to apply online—->   http://cp.disneycareers.com/en/default/  Once you open the site, on the right hand  upper corner. you will find a green [ APPLY NOW ]button, click it to begin your application process. After you have submitted your application, Disney recruiters will review your information and send out email whether you will be qualify or not based on the information. Then you will be direct to the next step. Once you got accepted after completed all the required steps. Then its time to talk to Professor G for further plan. Congratulation~~ !

If you didn’t get it the first try, do not  give up, never give up! Keep on trying, reapply !!  I have to apply 3 times till i finally made it to the program.   🙂

After you have done the phone interview, MORE WAITING…Trust me, you will be checking your email literally ALL THE TIMES to see if you get accepted or not ! Nerve racking each day, Lol …Just take a deep breath, let it be!  I remember the day when I saw the acceptance email that i was having lunch with a friend. We were eating and talking how come I still haven’t hear anything from Disney yet!  Little that  i know, i have gotten the email like 20 minutes ago. YES, cant believe that I’m going to Disney in AUGUST!!! Dream does come true!!!!!!

Later you will receive more emails.  By the way you have 7 days to decided to accept the offer or not. Then you have little more steps to  go through, until you are officially part of the DCP.

DORM . Pick arrival date. Join different Disney FB Groups Find Roommates/ Go random (optional)…Take your times, read through the instructions carefully.

Long times no see, Dear OpenLab

It has been a very long times since my last post here on open lab. During last semester, my research class professor was often reminding us the benefits of Open Lab can bring to us. Open lab is a FREE site for all Citytech Students and we should take advantage and use. It is a great platform to be connected with Professors and classmates in school.  Most importantly, we can upload our works and turn it into a great digital portfolio, which can be use to market ourselves to pursuit future careers.

Many years ago, I used to write a lot of posts in a Chinese blog site, share my days and interests weekly. Writing things in Chinese is definitely a lot easier because it was my first language I have learned.  I have to admit that I’m not comfortable in writing posts in English because English writing has always been my biggest weaknesses. There were times that I have to sit in writing center for so long just to have one page writing to be corrected. That’s why I have chosen Art design major when I first entered college. Eventually, I have found Hospitality was actually something that I’m more passionate and wanted to do beside Art. I really enjoy the energy and many great things about hospitality field. As result, hospitality has become my major and Art become my minor.

Few years ago, I was always afraid to go to English class and anything that’s writing related. Being in Art major allows me to learn so much on the creative side, think outside the box and pay close attention to details. Good thing about being in Art major you don’t have much essays and papers for many classes, except research classes. CityTech has offered so many great programs that I have chosen to stay after gotten my associated degree in Art design and begun my study in the hospitality management program. The day I got my program switched, the chair person stamped an approval note on the blue sheet.  It was the most exciting, tear and joyful moment. I was then officially a hospitality student in CityTech. Through the past few semesters, I have learned so much in both culinary and baking in working at the kitchen with teammates. My friend Ed used to tell me “if you enjoy what you do, you don’t work a day in your life…”. Now looking back all those years in school , I really really have enjoyed. Until this day, I still enjoy every day in school being part of the baking production class.

Most often, I don’t consider myself working in the kitchen, but having fun and learning the sometimes. I have acquired many new skills throughout semesters, which I am really proud of myself. Emmmm, let’s put it this put, being part of baking class was like creating Art with edible items. I was able to put together things I have already known and use the skills. What a perfect way to collaborate things I have already known with something new and create something interesting and tasting to the guests, right?

So let’s go back to the writing post topic, I believe in Practice makes perfect.  From now on, I will utilize this great site to share many things that I have learned, encountered, interested in my life. Especially things that I thought worth to share here in Open Lab. Hopefully that I can improve my writing and share the happiness you all the same time. Alright, so it’s like “kill two birds with one stone…”! Until next time, this is a little long but not too short introduction about me.

My Halloween Day Fun at Work

Halloween doesn’t exist while I was growing up because it is not part of my culture or celebrate it before. Until moving to America, I have experienced the many holidays that I have never celebrated before; which included Halloween day, Thanksgiving Day and Christmas.

In my culture, we have our own holidays that gather the families together just like Thanksgiving. However, after many years living in America, my family has gradually started to adopt the new culture and would celebrate sometimes. For example, Mom would set up  Christmas tree in the house with twinkle lights on the tree. I came to America at a young age but have never gone to trick or treating . I was always scared and shy. On Halloween, I would just watch through the window, seeing children with different costumes and ringing door bells one by one for candies. HA-HA… After graduated from HS, I have found myself my very first job working at a discount store, where there’s almost everything you can think of. During holiday seasons, the store would sell decorations and many different holidays’ essentials. During the month of October, the store sells Halloween costumes, decorations and much more for this “Crazy and wild holiday”. Young children, grownup, people from different ages would appeared in the store shopping for Halloween. Guess whats my favorite part? Yup, that would be dressing up and giving out candies to the children.

For the years I have been working day, I have dressed up in different characters. This year, I have dressed up as a Zombie; the idea was from the walking dead. I really like to watch zombie series TV shows and Movie. So on this year’s Halloween I had so much fun putting makeup on my face and turned myself in a “zombie” with torn Shirt that has fake blood stains;Which made it looks like a real“walking dead”.

With my new look, I have candies really and staying by the door waiting for trick or treat people to come. Sometimes, younger children would come up to me and back up few steps because of my scary look. Then they smile and said “trick-or treat”. I replied with a big smile,” Happy Halloween” and hand them candies. I really enjoyed Halloween day and interacting with people came to trick or treating.

Its like childhood dream came true. At the end, I would feeling exhausted but the fun I had made all worth it. Really appreciated to my bosses for giving the opportunity that I didn’t have when I was younger. That day, I’m n ot only working but having fun at the same time. 🙂

Amazing thing about the Topic

When a random person come up to you speak an unfamiliar language, you might of guess whether he/she is talking about good things or bad things about you.

We living in a very diverse country, where people come from all over the world. We all have our own cultures and customs. We celebrate different holiday and eat different food. However, if you have the ability to speak and understand the language of a particular group that you are not original from could be one of the amazing thing. This allows you to have a better understanding of their cultures and many great information about them. You do not have to question yourself about what they are talking about. You can blend in the group and to interact, learn about their one of kind background that is different as your own. We are diversity, which made our community a much interesting place.

Issues/problems/solutions that related to your topic

Learning Chinese is not the easiest things to do because it involves learning different strokes and tones. One particular word with different tones can result in something completely different. Even with same tone,same pinyin that does not mean it will be the same Chinese character.

Luckily, in Chinese, there are only 4 tones, sometimes there is the 5th tone, called silence tone. For example, in pinyin, Wen with first tone, means Warm. Wen with second tone means Smell.Wen with third tone means Kiss. Then Wen with four tone means Ask. Who would of think of a word with different tones can become another new word. In English, there is no such thing as “Tone”, which makes very easy to learn, except grammar. Then in Chinese, there is no grammar to learn, just some simple rules.

In order to write the correct Chinese character , one must memorize all the strokes. In missing one stroke, a character might of turned into something very differently. I believe this is one of the biggest problem for foreigner to learn Chinese. I have asked few non-Chinese speaking  students in my Chinese class, they have agreed these are their major concern in learning Chinese. However, acquire new skill take times and  LOTS PRACTICES. Not only in writing, but practice to say words out loud enable learners to improve their Chinese skills with great result.  

How am I different as compared to other people?

For class HMGT 2405, Hospitality marketing, we ourselves are the product. We use different platforms to present ourselves to the world. Let people know about our strengths, advantages and valuable qualities as individual. For example, letting our future employers to know our characteristics that are worth to hire us for a particular position. In this blog, we are responsible to blog about a topic which some would say you know better than any other living person.First of all, we are all one of kind. Just like the fingerprints and the snowflakes that are all equally beautiful and unique. The qualities we each obtain make us significantly valuable.

I’m student here in New York City College of Technology, CUNY, Brooklyn. I am currently majoring in the Hospitality Management. I have received an associate degree in Advertisement Major. Art has played an important role in the first few years of my college life because it’s a way of express my passion in a creative way. I have always believed a picture tells a thousand words. Therefore, I have studied Art to improve my creativities that can benefit me later in my life. I am an outgoing person and always enjoy meeting with different people. Especially, learning about people cultures and try different food.

Hospitality field allows me to learn so many exciting things I enjoy each day, such as baking, cooking and interacting with different students with different backgrounds. There are classes allow me to learn knowledge on working and managing a hotel or restaurant in general. In the future, my goal is to have my own bakery shop. The idea enables me collaborate both my creativity in art and hospitality together as one. I want to delivery my hospitality to the people through my passion and enthusiastic.

WHY you have picked your topic?

This post is for my Hospitality Management course HMGT 3502 Research Seminar here in CUNY, Citytech, Brooklyn. WHY you have picked your topic?

I have chosen to research the topic, Bilingual because I believe it could be a big plus in one’ resume. When one speaks more than one language enable them to have many advantages in life. For example, Job opportunities enrich their lives, entertainment, learning experience, educated themselves and help one another and much more. I have learned to speak my second languages after came to America at a young age. Actually, I am able to speak two and a half languages because I also know a Chinese local dialect called Wenzhounese, often referred as the “Devil language”. It is a very popular dialect spoken in Queens, Flushing. Wenzhounese is a little different as compared the main language, mandarin. Wenzhounese does not have its own form of writing. Meanwhile, people often said it is difficult to learn.

In my own experience, able to speak more than one language has helped me so much in different circumstances. Since English was not my first language, I often have to digest what others saying in Chinese first then respond them in English. In the beginning, it was not easy at all because I didn’t learn English back in my own country. When I first started school here in America, I have met a very nice friend named Valentina. She has helped me so much in the process of learning this new language. I had difficulty in communicate with my teachers and have no idea what my teachers were telling me. Under the help from Valentina, I have gradually picked up word by word. This example shows being a bilingual not only enrich one’ life but help another, as well.Especially applies to people whom are working at the hospitality field; we are providing friendly, generous services to our guests each day. In order to meet our customer’s satisfaction, we have to make sure meeting our customers’ need at all time. There are visitors from all around the world to visit this beautiful land but not many can speak the language, English. When we able to speak the language the visitors speak enable them to feel home and more enjoyable during their visit.

As conclusion, when one has the skill to speak more languages can learn about another person’s culture. One of my teacher used to say, our brain is like a elastic band;The more we learned, the bigger it will expand. In other words, knowledge is power, language leads  you to build power and make more friends. Learner obtain knowledge, help one another and expand their visions in different cultures. As a bilingual student, I am very proud to speak more than one language and embrace my own culture. I want to share my experience with others, everyone should speak more than one language because of all the advantages that come along.
