    Hospitality you can say originated by the Sumerians who were successful farmers. In French, Hospitality or “Hospice” meaning provide care and shelter to travelers. Since Medieval Times, Greece and Rome, and as well as The New World there were many Inns, Rest Houses, Coffee Houses and Taverns being built and located where many historic people stayed. By the 19th and 20th Century recipe books and the development of the hospitality industries were being built and made. A traditional symbol is the Pineapple which symbolizes welcome and friendship and even hospitality. The hospitality industry is abroad, but the main themes to break it down are Managed Services, Restaurant Business and Hotel Business.

    Summarians, smart and creative people. Successful farmers. Created their own pottery, beer and currency. Because of them the farming tools we use now are available. Because of them we can go to a bar to relax and have a good time after work. Because of them bar rules were first created in Greece and Rome. Hospitality at its finest.

    During the 8th century, Rest houses were made. England had their version of it called post houses. During the 17th century, coffee houses became popular all over Europe. Like bars where people went to unwind at the end of their day, during the day they went to coffee houses. Hospitality at its finest.

    During the new world the bars, hotels, motels and coffee houses were now common. So common many of the early presidents owned and frequent them. When the French revolution hit many Frenchmen lost their jobs. Migrating to New Orleans now dubbed the French quarters they introduced their cuisine to the coast. Because of the French cuisine the 19th century paved the way for many famous chefs such as Antoine Careme and her a la carte menu. In the 20th century hotels, motels, fast food and coffee shops sprang up everywhere. Further paving the way for hospitality and its now diverse and wide sector.
    The future of hospitality is now fun and fascinating. One of the global symbol of hospitality is the pineapple. Because of its origin and new roots all over the world its rich heritage has been favored in the hospitality industry for many years.
    Hospitality is one of the fastest growing fields in the world. Hospitality affect and cater to human experiences all over the world and in all aspects. It is used in hotels, restaurants, airlines, and the list goes on. 365 days a year, 24 hours in a day shift after shift hospitality workers are needed. The philosophy behind it is we buy loyalty with service. That is the age of service. That is hospitality at its finest.

    The French Revolution changed culinary to notabilities lose in power, with the lose of power many chef lose their job and immigrated to the New World introducing flavorful dishes to New Orleans. In the 19th century both Antoine Careme and Auguste Esoffier published cookbooks that explained classic recipes and kitchen structure. The 20th century further expanded hospitality due to the influence of baby boomers in tourism and travel.
    Hospitality has a bright future and it’s expanding more and more each day. It creates memories for those who travel and work in the field. It provides care, service and for fills desires 24/7 meeting the needs of people in an ever growing industry.

    Hospitality is the way of treating people in the way you want yourself to be treated. For example hotels are called home away from home because it’s the only place where we get food and accommodation provided all luxuries and comfort. The hospitality also increases profit and reputation of the hotel. The origin of hospitality began in Europe. The main aim was to offer hospitality for pilgrims. They were especially designed as profit making business, it was the first in hotel keeping. Inn keeping is believed to be started in 1650. Cafes were opened in Paris and coffee house in London, during industrial revolution. In the 1950 new concepts were built and in 1960 many individual owners merge themselves with large chain for franchising. In 1970 the hotel industry was booming and since then progressing day by day.

    After reading chapter 1 I got to know more information on hospitality and how the name originated which was from the French term “hospice”. Then more on how the industries started services that we all used today on a daily basis. It started out in the ancient times where taverns were first created. I found It funny how the code of Hammurabi which is one of the first written documents for crimes partaking in a tavern, which states they would impose the death penalty for watering down beer. Anyways the hospitality began to progress as the Greece and Rome implemented, coffee houses began, The New World, The French Revolution, The Nineteenth and twentieth century all had something to do to begin this hospitality industry. After world war two they had developed a large amount of hotels, motels, coffee houses, and fast food spots.
    After reading i conclude that hospitality is to take care of somebody by providing some type of service to the guest. This occurs everywhere like airlines, military facilities, schools, healthcare operations, hotels& restaurants etc… The industry is open for some operations everyday all year around. The Hospitality industry is a big and you have to have a impeccable performance with your guest so that you can attract them back in the future for more service at your business/workplace in the future. You have to create loyalty with your service so it could do desirable for one to remember.

    Hospitality’s foundation stems from various times and regions. The word/term itself originates from the french term “hospice” which means to provide care and shelter for travelers.
    Its foundation began in Ancient times with the Summarians. The summarians were farmers who introduced beer, thus leading to the first taverns. Taverns then debut and spread in Europe, China, Egypt and India. To maintain order in the taverns and the quality of beer, they exercised the harsh Code of Hammurabi in 1700 B.C.E in Rome. The first Inns are build by the Romans about 25 miles apart on main roads. In the 8th century, Rest houses are introduced by Charlemagne. After this, post houses begin springing up and becoming popular due to the fact that they are conveniently located for travelers alongside stagecoach trials. In the 16th century, taverns take the next step forward by serving fixed price meals. Even 2nd president John Adams played a role in hospitality history, by owning tavern from 1783-1789. Coffee houses(cafe’s) start sprouting and becoming centers for socializing in the 17th century. The famous Cafe Florian on piazza San Marco still operates today. The first cookbooks are published in the 19th century. During this time, the concept of the “a la carte” menu is born. Cookbook author Auguste Escoffier introduces the brigade system which is so commonly found and practiced in today’s restaurants kitchen structures.
    In modern day hospitality branches out from just restaurant and hotel, to also include food services for airlines, military facilities, schools, healthcare operations, business, as well as events.
    Some of the key principals in today’s hospitality field that we aim to focus and achieve now that the foundation has been set out for us are the following:
    -Creating the Wow Factor through Moments of Truth which is any interaction between the guest and the associate. This can be achieved by having a service spirit and passion.
    -Top Quality Management(T.Q.M). Having managers that are good leaders, which leads to productivity, and guest and employee satisfaction.
    -Sustainability. Keeping the economic prosperity rolling forward while keeping in mind future generations and protecting natural resources to pass on to to them a better tomorrow.
    -Perishability. Knowing and keeping in mind that we face perishabilty and how to best minimize it.

    In Chapter 1, we first learn about the definition of Hospitality. The word dervies from the French word hospice that means “to provide care/shelter for travelers.” It began with Summerians who after becoming very successful farmers also began activities like making tools and creating beer. Soon after taverns and inns started to pop up all trough out Europe, China, Egypt and India. Along with that we learn the world wide symbol for Hospitality is the tropical fruit pineapple which was brought from the West Indian culture to Europe. To prevent crime, penalties were writteen in the 1700 B.C.E Code of Hammurbi.

    The chapter touches on very important periods such as the Roman era who distanced their inns as far as 25 miles apart and Charlamagne era that established rest houses for pilgrims in the 8th century. We learn too that te 1st American president George Washington maintained his headquaters at Frauncis Tavern, John Adams, 2nd president owned on of his own.

    Moving into the 19th and 20th century we read about La Cuisine Classique a classic cookbook by Antoine Careme that jumpstarted the la carte menu. In the current era we learn of influential figures in Hospitality just the same with Walt Disney company who’s trademark slogan goes “we create happiness.”

    In modern day there are several careers that can be achieved within the Hospitality Managment title involving hotel managment, restaraunt owners, culinary arts, arirlines managment, school cooks, travel agents, travel and food critics and many more.

      Hospitality goes all the way back to Ancient times and was commenced with the Summarians. After becoming victorious farmers, the Summarians originated activities such as producing money, tools and beer. One of the first written documents imposing penalties for illegal acts in Taverns was the Code of Hammurabi, the code also inflicted the death penalty for diluting the beer. Rest houses for pilgrims were established in the 8th century by Charlemagne. Eating places also known as ” ordinary ” were taverns serving priced meals in the 16th century. During the 17th century, coffee houses were built all over Europe, being that coffee houses were the literary and social sites of their day. During the 1600s, ordinary’s became familiar in the New World. A Tavern where President-General George Washington retained his Revolutionary headquarters still runs today.

      The course of Culinary history changed due to the French Revolution, being that mostly all French chefs were labored by nobility, once the nobility lost their property and titles, the chefs lost their jobs; then immigrating to the New World. They found themselves in New Orleans where they were introduced to new sauces and other flavorful cuisines that replaced the primal cooking that originated with the British. Once the nineteenth century came, cook books were being published and 35 restaurants in NYC celebrated their 100th anniversary.

    Chapter one has given me a better understanding on how much the hospitality field has grown over time. However, the tradition and concepts that hospitality started with still exist today. The success in the services provided is one of the key factors that drives the hospitality to continue to grow. With operations running all day and year, the different shift schedules that cover all 24 hours in a day is very important. During each shift, the training and passion of working in this field helps provide a great guest experience. After World War II ended, during the baby boomers’ seasonal years, there was a rapid increase of hotels, motels, fast foods and coffee shops growing. The hospitality and tourism industry grew a lot and they are currently the largest industries in the world. Within the hospitality businesses helps expand humans’ needs and wants a lot. Since foods is a major need for consumption, people also needed places to attend to for when socializing and/or rest their days; spend their time throughout the days. With much persuasions within these fields, customers are able to achieve much entertainment and interest within them. This field really gives the warmth and care that many customers have always wanted in their lives.

The places where the travelers would stay would considered Taverns or Inns. Back then when water wasn’t the cleanest beverage, beer was what they served. Providing them a place to stay and relax and enjoy each other’s company. Even during the beginning of the Code of Hammurabi, rules stated that guests whom planned crimes within their taverns were to be report, otherwise they would face the death penalty. Other things that influenced the habits within the places that provided hospitality was coffee and tea. Coffee and tea had a huge impact upon not only Western Europe but has spread among many other places. Overall, the goal within the hotel industry is to make the guests stay not only enjoyable but happy as well.

    The beginning half of Chapter 1 takes us through world history on how the Hospitality started, noting all the way back to Mesopotamia with the Sumerians creating the earliest taverns to serve their beer to people in the surrounding area. Later as early international trade between Europe, Asia, the Middle East, the Mediterranean and Africa became more popular (i.e. the Silk Road/Route) lodging establishments began to pop up along the main trade routes. Eventually the tavern and inn became more developed as newer modes of transportation were used. Cuisine was also passed around during trading and world events, the most prevalent case in the presentation being when French chefs migrated to Louisiana during the French Revolution after losing their jobs from the nobility being persecuted. The Industrial Revolution, the invention of the automobile and other things caused more innovative business models for tourism, travel and attractions.

The chapter moves on to explaining job positions in the industry and what we must provide customers as hotel employees. Not only does it talk about what we must provide to customers, but it states what the positions provide for us such as competitive pay, and different shift and positions starting from the bottom of the scale uprising to the top positions in the hotel industry.
